Meal Plan Mondays

Wondering what to eat this week?  Writing up a meal plan is a great way to budget your time, money and nutrition over the course of the week.  Our meal plans tend to be very flexible, serving more as guidelines for what we hope we make, not a rigid, must-stick-to-me plan.

Sometimes there are more left-overs than planned and we’ll skip something, or maybe we’ll devour everything unexpectedly one night and we’ll improvise the next.  We’ve found that knowing what the week will bring helps reduce waste (Why are there wrinkly carrots in the produce bin? Oh right, forgot they were there!) and keeps us from defaulting to more un-healthy choices because we didn’t know what to make.

Here’s an archive of our MPMs.  Perhaps they can help inspire you, or just illustrate what a vegan family eats.  These posts will also help our family see what our eating patterns are, and what we could/should change down the line.

Also, I’m a very lucky tester for some fabulous cookbook authors, and often mention their recipes on the blog.  I know it can be frustrating to not have the recipe, but I would encourage you to look at their blogs (links always in my posts) as they often provide recipes for everyone’s enjoyment!
