This is Mr. Fish. Isn&#8217;t he just too freakin&#8217; sexy-cute? (I&#8217;m not used to the beard, but I think it&#8217;s pretty fun). Sadly, he was unable to come with the Guppy &#38; myself on our North American adventure. I&#8217;m missing him something awful. So is the Guppy.

<p style="text-align:justify;">When we met, Mr. Fish and I thought we&#8217;d do a lot of collaborating musically. I&#8217;ve been a singer (dancer, poet, papergirl) and he was singing and playing in a band when we met, and the logical &#8220;next step&#8221; was for us to start writing songs together. The universe laughs at you, though, when you start getting all arrogant and begin planning things&#8230; Mr. Fish&#8217;s former band broke up (don&#8217;t call me Yoko! I really had nothing to do with it.) and our lives took a very different direction.</p>
<p>We did manage one amazing collaboration though :</p>

<p style="text-align:left;">This is my favourite way to serve left-over chili the following day - burritos! Just put a little on a tortilla with some soy yogurt (which is like my version of sour cream) and some chopped tomatoes and even for an exceptional treat - avocados! Yum!</p>

<p>Holy portion sizes, Batman! I&#8217;m back in the land where <em>everything</em> is bigger, newer, brighter &amp; shiner! I am extremely thrilled to spend time with my family, so excited to eat pinto beans, green chilies, or blue corn chips whenever I want to, and to catch <a href="http://www.sesameworkshop.org/sesamestreet/" target="_blank">Sesame Street</a> on PBS with the Guppy!  I haven&#8217;t been on North American soil in two years (and to be honest, last time I was here it was for a sad/urgent reason and I didn&#8217;t really do any &#8220;observing&#8221;) and  it&#8217;s surprising how much things have changed (and yet, have stayed the same). Logically, the longer I live away, the more I find myself feeling like an observer and not at all like a participant, though it is rather strange to get the feeling I&#8217;m more of a foreigner &#8220;visiting&#8221; than an expat &#8220;returning&#8221; home. So silly all these games of the mind!</p>
<p>I promise I&#8217;ll be putting together a little post showcasing the newish or striking things I&#8217;ve noticed since I&#8217;ve been here (holy inflation, Batkids!). I&#8217;m also giving some thought to my future post highlighting the differences between the eating habits of the French and the North Americans. I&#8217;m actually in Southern Michigan, which is not &#8220;home&#8221; for me, but home is where your family is, and that&#8217;s where most of my peeps are this summer. I&#8217;ll be heading north soon, and will hopefully get to spend <em>at least </em>a day in one of my very favourite countries, Canada.  There has been some first rate food and lots of fun so far on my visit, so I&#8217;ll need to get my poop in a group and get some photos of all that excitement on the blog post-haste!</p>

<p style="text-align:left;">It&#8217;s July 14th and that means it&#8217;s the French National Holiday! Tearing down the prisons of economic hierarchy and gettin&#8217; giggy with the people - right on. I&#8217;m sorry I missed being home for the fireworks &amp; fun, but I caught <a href="http://fr.news.yahoo.com/afp/20080713/tod-femmes-politique-14juillet-insolite-7f81b96.html" target="_blank">this little news</a> story online, featuring one of my favourite French Feminist groups, La Barbe, who denounces the omnipresence of males in positions of power in government, and it made me smile. These women commemorated the holiday by placing beards on the statues of the monument at <em>la place de la République</em> (dear to my heart because I lived just near by). This isn&#8217;t the first time they&#8217;ve done this:</p>

<p style="text-align:justify;">It&#8217;s that time of year : Summer Vacation! Before putting away our textbooks and red pens and breaking out the SPF 200 and beach towels, we need to have a little fun, and with the Shellyfish that means some tasty vegan fun! I&#8217;ll warn you now, I could have sub-titled this entry : The <a href="http://www.theppk.com/" target="_blank">Isa Chandra Moskowitz and Terry Hope Romero</a> French Ad Campaign&#8230; with a little plug for <em>ma chérie, </em>the polyglot and chef extrordinaire,<em> </em><a href="http://havecakewilltravel.com/" target="_blank">Céline</a>.</p>

<p style="text-align:justify;">One of my jobs is teaching Adult English Conversation Classes. I absolutely love my job &amp; my students this year who were all fabulous, intelligent, witty and groovy women with lots of different experiences and talents to share. I also love parties. <p style="text-align:justify;">Un de mes boulots est d&#8217;animer des cours de conversation anglaise. J&#8217;adore mon travail et surtout mes élèves qui cette année étaient des femmes géniales, intelligentes, avec beaucoup d&#8217;esprit et de classe qui avaient toutes des expériences et des talents variés à partager. <p style="text-align:justify;">I made these Chocolate &amp; Raspberry cookies from <a href="http://theppk.com/nomicon.html" target="_blank">Veganomicon</a>, though I used some of my homemade strawberry jam instead. These are some of <a href="http://shellyfish.wordpress.com/2008/04/12/cookies-for-monsieur-hotto/" target="_blank">our favourite cookies</a>, though I make these much bigger than called for (I&#8217;m such a rebel) and cut down on the cooking time a little so I end up with a very chewy, almost <em>gâteau fondant</em> centre, and a lightly crisp outside. Divine!</p>

<p style="text-align:justify;">After raving about the glory of the <a href="http://shellyfish.wordpress.com/2008/05/30/c-is-for-cookie-c-is-for-celine/" target="_blank">Snickerdoodle</a> (because it is virtually unknown here <em>en france)</em>, I was obliged to also bring some of <a href="http://havecakewilltravel.com/2008/05/21/vegetarian-times-snickerdoodles/" target="_blank">Céline&#8217;s Veg-Times Redoux Snickerdoodles</a>. I actually had to make three batches because Mr. Fish kept sneaking them and I didn&#8217;t have enough to bring with me (I of course didn&#8217;t sneak any, ahem.)! If you haven&#8217;t made these yet, don&#8217;t. I mean it. Once you make them, you&#8217;ll fall in love with them and will be making them all the time. You won&#8217;t be able to stop yourself! These are seriously our most favouritest cookie of all time ever in the entire galaxy!</p>

<p>And because peanut butter <strong><em>anything</em></strong> is considered inherently North American, I always try to reinforce those stereotypes with some &#8220;Big Gigantoid Peanut butter Cookies&#8221; from <a href="http://www.theppk.com/veganwithavengeance.html" target="_blank"><em>Vegan With A Vengeance</em></a> (yes these are the same cookies <a href="http://shellyfish.wordpress.com/2008/07/10/la-fete-des-ateliers-a-flc-fontainebleau-loisirs-et-culture-open-house-at-the-flc/" target="_blank">as here</a> - I made a ton!). These are usually the cookies I make for folks here in France who declare &#8220;eeww, I don&#8217;t like peanut butter!&#8221;. I sneak these babies in and they usually really like them and then we have a little laugh about clichés, stereotypes, the North American&#8217;s and their peanut butter, the French and their Nutella&#8230;it&#8217;s all good!</p>

<p style="text-align:justify;">While there are many culinary differences between France and North America (I need to do a post on that sometime), one fundamental difference is SUGAR (and snacking, and junk food, and ice cream consumption&#8230; I really need to do a post on this!). When I started getting my baking groove on about a year or so ago, I&#8217;d make my vegan buttercream and be all thrilled about it, but Mr. Fish who is most definitely a <em>gourmand</em> (that&#8217;s a polite French way of saying that he is incapable of controlling himself when faced with all that is delicious) can&#8217;t take it. Same for fudge! This is also one of the main reasons that as a country the French are collectively much thinner and remain in far better health until a far more advanced age, despite the heavy consumption of fats (also the snacking&#8230;).  Anyway, all that to say I wanted to make a fun cupcake sans frosting and not too too sweet, so I made the Agave cupcakes from VCTOTW. This was the first time I made them and they were great! Very moist and a little heavier than the traditional cupcake, though this also could have been due to the fact that after baking up a storm for the Open House I was out of cupcake liners!</p>
<p style="text-align:justify;">I had more cute pics of my lovely students, but as I mentioned, I had an evil happening with the technology and lost a host of pictures&#8230; hélas.</p>

This post is a little (very) late&#8230;let&#8217;s just pretend it&#8217;s still June, ok?</span></span></p>
<p style="text-align:justify;">Le samedi 14 juin c’était la fête à FLC : <a href="http://www.flc-mjc.asso.fr/index.htm" target="_blank">Fontainebleau Loisirs &amp; Culture</a>, puisque nous avons littéralement ouvert les portes au grand public ! En règle générale je me trouve dans ma salle de classe avec mes élèves au premier étage (avec la porte fermée pour ne pas gêner les autres- on s’amuse bien en cours et ça s’entend !).   En tant qu’animatrice des cours d’anglais*, j’essaie de préparer des cours aussi ludiques et intéressants que possible, avec des supports aussi variés que possible : peut-être un article sur <a href="http://www.voanews.com/specialenglish/2008-06-07-voa1.cfm" target="_blank">la politique</a> aux Etats-Unis, <a href="http://www.classicshorts.com/stories/lamb.html" target="_blank">une nouvelle</a> parlant des difficultés de la vie du couple (<a href="http://www.youtube.com/watch?v=GovJ4jAnr14" target="_blank">et même une chanson qui propose une autre solution assez extrême !</a>), <a href="http://www.voanews.com/specialenglish/archive/2008-05/2008-05-06-voa2.cfm" target="_blank">un texte</a> bien utile qui nous explique comment prendre soin de ceux qu’on aime,  ou bien l’analyse des films qui mettent en valeur des <a href="http://www.amazon.fr/Gandhi-Ultimate-DVD-Ben-Kingsley/dp/B000M2EH8W/ref=sr_1_1?ie=UTF8&amp;s=dvd&amp;qid=1215691294&amp;sr=1-1" target="_blank">&#8220;personnes&#8221;</a> et des <a href="http://www.amazon.fr/Christmas-Carol-George-C-Scott/dp/B00005NOLZ/ref=sr_1_1?ie=UTF8&amp;s=dvd&amp;qid=1215691531&amp;sr=1-1" target="_blank">&#8220;personnages&#8221;</a> clefs de la culture anglophone.</p>
<p style="text-align:justify;"><span style="color:#008000;">Saturday June 14th things were rather festive at FLC, or Fontainebleau Loisirs &amp; Culture, because it was our end of the year open house! Generally I&#8217;m up in my classroom with my students on the second floor (with of course the door closed as to not disrupt the other classes- we tend to have fun and laughter carries!). As the English language teacher*, I try to make my classes both interesting and fun, using as many different mediums and subjects as I can, incorporating varying facets of language and Anglophone culture : maybe an article about <a href="http://www.voanews.com/specialenglish/2008-06-07-voa1.cfm" target="_blank">politics</a> in the United States, or perhaps <a href="http://www.classicshorts.com/stories/lamb.html" target="_blank">a short story </a>about the &#8220;difficulties&#8221; of married life (<a href="http://www.youtube.com/watch?v=GovJ4jAnr14" target="_blank">and even a song with a rather unique solution to said difficulties!</a>), <a href="http://www.voanews.com/specialenglish/archive/2008-05/2008-05-06-voa2.cfm" target="_blank">a handy little text</a> which explains how to &#8220;take care&#8221; of those we love, as well as watching and discussing films which highlight key people and <a href="http://www.amazon.fr/Christmas-Carol-George-C-Scott/dp/B00005NOLZ/ref=sr_1_1?ie=UTF8&amp;s=dvd&amp;qid=1215691531&amp;sr=1-1" target="_blank">characters</a> of Anglophone culture.</span></p>

<p style="text-align:justify;">FLC propose des tas de cours &amp; ateliers : langue étrangère, art plastique, musique, cuisine - et encore! - et J’étais ravie lorsqu’on m’a proposé d’animer un atelier cuisine &#8220;sucré&#8221; spéciale ayant pour thème la « Cuisine nord américaine » lors de notre fête des ateliers ! Et je n’ai pas hésité une seconde lorsqu’il fallut choisir les recettes : des cupcakes au chocolat de  <a href="http://www.theppk.com/vegancupcakes.html" target="_blank"><em>Vegan Cupcakes Take Over The World </em></a> et des cookies aux flocons d’avoine et à la purée de cacahouète de <a href="http://www.theppk.com/veganwithavengeance.html" target="_blank"><em>Vegan With A Vengeance</em> .</a></p>
<p style="text-align:justify;"><span style="color:#008000;">FLC offers a so many different classes &amp; workshops : foreign langues, art, music, cooking - and more! - and I was thrilled when asked to lead a special &#8220;sweets&#8221; cooking workshop featuring &#8220;North American Cuisine&#8221; during our Open House! And I knew exactly what I wanted to make : the &#8220;Basic Chocolate Cupcakes&#8221; from <a href="http://www.theppk.com/vegancupcakes.html" target="_blank"><em>Vegan Cupcakes Take Over The World</em></a> and the &#8220;Gigantoid Peanutbutter Cookies&#8221; from <a href="http://www.theppk.com/veganwithavengeance.html" target="_blank"><em>Vegan With A Vengeance.</em></a></span></p>

<p style="text-align:justify;">Tout d’abord il fallait traduire les recettes et aussi faire les conversions entre le système Impériale et le système métrique (tellement plus facile !). J’ai donc préparé des cookies et des cupcakes à proposer aux visiteurs lors de la partie « portes ouvertes cours d’anglais » avant notre atelier cuisine, en faisant les conversions à chaque étape.</p>
<p style="text-align:justify;"><span style="color:#008000;">First I had to translate and convert the recipes from the Imperial system over to metric (which is so much easier, seriously people, it&#8217;s crazy!). I opted to make some test batches (translating and converting as I went using my kitchen scale) to serve to the passers by during the first part of the Open House where I greeted visitors in my classroom.</span></p>
<p style="text-align:justify;">Je regrette sincèrement, mais je n’ai pas de photo de notre séance « cuisine et langue » (puisqu’on l’a fait en « franglais » !), j’étais tellement prise par ce que je faisais ! Je me suis beaucoup amusée, et les participants aussi (je pense), et nous nous sommes bien régalés aussi bien sûr ! Et le meilleur était de montrer à tout le monde combien les pâtisseries « sans cruauté » sont bonnes et faciles à préparer ! Beaucoup de monde passa, intrigués par les arômes venant de la cuisine, et il y avait plus d’une personne dubitative lorsque quelqu’un chuchotait « C’est végétalien ! Il n’y a pas d’œufs ! Tu te rends compte ! », mais je peux vous assurer qu’il ne restait plus rien à la fin de la séance, ils ont tout mangé ! Je n’avais pas pour mission explicite de faire de la propagande végétalienne, mais, si j’ai pu montrer aux non-croyants que c’est plus que possible de bien manger sans faire de mal aux animaux (et moins de mal à soi), tant mieux !</p>
<p style="text-align:justify;"><span style="color:#008000;">I&#8217;m so sorry that I don&#8217;t have any picutres of our &#8220;language and cuisine&#8221; session (because we did it in &#8220;fringlish&#8221; sharing random English vocabulary for baking &amp; the kitchen- fun!) but I was so into what I was doing, it didn&#8217;t even occur to me to ask someone to be my photographer! I had so much fun, as did the participants (I hope!), and we also loved <span style="text-decoration:line-through;">devouring</span> sampling the goodies! But for me, the most rewarding part was showing everyone that &#8220;cruelty free&#8221; baked goodies were so yummy and so easy to prepare! There were many folks who just passed through the kitchen, curious as to the enticing aromas coming from the oven, and there was more than one eyebrow raised and doubtful look when someone whispered &#8220;It&#8217;s vegan! There are no eggs! Can you believe it?&#8221;, but there was nothing left at the end! They ate everything!  I didn&#8217;t have a hidden agenda of Vegangelical propagandising, but if I was able to show a few non-believers that it&#8217;s more than possible to eat well without harming animals (and harming yourself a little less), well rock on!</span></p>

If you&#8217;re looking for the original versions of these recipes you can try <a href="http://www.chow.com/recipes/10794" target="_blank">here</a> for the cupcakes, but I&#8217;m not sure the cookies have leaked to the blogosphere&#8230;though I&#8217;m sure they&#8217;re out there.</p>
<h2><strong>Cup Cakes au Chocolat</strong></h2>
<p>Ingrédients :</p>
<p>20cl lait de soja<br />
5ml vinaigre de cidre<br />
200g sucre en poudre<br />
7cl huile végétale<br />
10ml essence de vanille<br />
180g farine<br />
65g cacao en poudre<br />
3.5ml (3/4 teaspoon) de bicarbonate de soude<br />
2.5ml (1/2 teaspoon) de poudre levante (je peux en emmener si tu veux)<br />
pincée de sel</p>
<p>1. Mettre le soja et le vinaigre dans un grand bol et mettre de côté.<br />
2. Préchauffer le four à 175°. Mettre les feuilles de papier dans le moule (je peux emmener les deux si tu veux).<br />
3. Ajouter le sucre, l’huile, et la vanille au soja et mélanger à l’aide du mixer jusqu’à ce que ça mousse.<br />
4. Passer au tamis (ou juste fouetter avec une fourchette) la farine, le cacao en poudre, la poudre levante et le sel dans un autre bol.<br />
5. Ajouter en deux fois le mОlange de farine aux ingrédients liquides tout en mixant, jusqu’à obtenir une pâte lisse &amp; homogène.<br />
6. Repartir la pâte dans les moules (les remplir au 3/4) et enfourner pour 10-15 minutes.</p>
<h2>Peanut Butter-Oatmeal Cookies</h2>
<p>Ingrédients :<br />
225g farine<br />
175g flocons d’avoine<br />
10ml (2 teaspoons) poudre levante<br />
pincée de sel<br />
175ml huile végétale<br />
175g beurre de cacahouètes<br />
225g sucre roux<br />
200g sucre en poudre<br />
125ml lait de soja<br />
10ml (2 teaspoons) essence de vanille</p>
<p>1. Préchauffer le four à 180°. Sortir 2 plaques de cuisson.</p>
<p>2. Mélanger la farine, les flocons d’avoine, la poudre levante et le sel dans un grand bol. Dans un autre bol, mixer l’huile, le beurre, les sucres, le lait et la vanille.<br />
3. Ajouter le mélange de farine aux ingrédients liquides et mixer. La pâte sera très humide et collante, c’est normal ! Répartir des cuillerées de pâte (aprox. La taille d’un œuf) sur la plaque de cuisson (aprox. Une douzaine). Enfourner pour 10-12 minutes, puis laisser refroidir quelques minutes, puis les déposer sur une grille.</p>

A bit back I found the this great (super-easy) <a href="http://www.tinyhappy.typepad.com/tiny_happy/2006/06/shoulder_bag_tu.html" target="_blank">bag tutorial</a> over at <a href="http://tinyhappy.typepad.com/tiny_happy/" target="_blank">Tiny Happy</a> (who just has the most lovely ideas). I was really motivated to try and make myself a bag, so after spotting some fun fabric at the <em>marché</em> I set to work :</p>

<p style="text-align:justify;">This was such a great first project to make : easy, straightforward (if you read the directions before beginning&#8230;which I didn&#8217;t, and made a very predictable mistake right off, but not a grave one&#8230;). It has two small inside pockets for my phone and for my wallet. I have been using this bag as a purse- it&#8217;s big enough for my agenda, keys, some random doo-dads for the Guppy, etc. I really love the fabric- it&#8217;s actually home decorating fabric, green and sort so satiny. I will perhaps make a scaled-down version of this for my nieces&#8217; birthdays in September with some fun pre-teen fabric.</p>
<p style="text-align:justify;">I dug my little hobo bag so much I wanted to make another larger version for carrying graded papers and whatnot, so I improvised and just sort of invented the dimensions based on Tiny H&#8217;s tutorial after finding the most adorable flowery corduroy fabric (again at the <em>marché</em>, my little town doesn&#8217;t have a fabric store&#8230;) :</p>

<p>I got all rock star with this one and rather than just doing a simple little button closure, I did a snazzy flap (which was of course also easy, but was fancy for me!). The photo colors aren&#8217;t as true as I wish they were, because the lavender lining material is just such a pretty color&#8230;just pretend you can see the vivid color, ok?</p>

<p>I mentioned in <a href="http://shellyfish.wordpress.com/2008/06/09/birthday-anniversary-meme/" target="_blank">this post</a> that I wanted to work on <a href="http://amingledyarn.wordpress.com/gallery/tutorial-hip-mama-diaper-bag/" target="_blank">this bag</a> from <a href="http://amingledyarn.wordpress.com/gallery/tutorial-hip-mama-diaper-bag/" target="_blank">A Mingled Yarn</a> (who also has such lovely projects going on). I&#8217;m the most proud of this one because it was really out of my league due to the complexity of the steps, and my unfamilarity in reading sewing tutorials, but I didn&#8217;t care! I needed a large messenger-type bag for an upcoming trip, and loved this linen fabric and <em>knew</em> it was destined for a bag.</p>

<p style="text-align:justify;">It has Velcro front and side pockets - I couldn&#8217;t figure out how to not have the Velcro stitches showing without losing losing the durability of sewing through the layers of fabric, but I have since decided to use a decorative dark blue ribbon to disguise the rectangles.</p>

<p style="text-align:justify;">The large inside pocket has four mini-pockets - this was the first time I used elastic! Talk about living on the edge! I&#8217;m still so punk rock&#8230; Since this was my first real multiple-step project, I learned so much. It was challenging in that so much of what I did at the very beginning had a huge impact on what I was finishing up at the end&#8230;oh the interconnectedness of the universe&#8230;</p>
<p style="text-align:justify;">So despite some newbie errors, a few slightly-crooked seams, and 4 broken sewing machine needles (all during the last 10 minutes of the project!) I am over-all thrilled with this. My sister-in-law who is an avid seamstress was commenting on how she liked my<em> sac</em> and asked me where I bought it! How proud was I when I told her I <em>made</em> it!  I am hoping to make another one for one of my sisters who is having a baby girl in November, but with dark brown and pink colors (which is what they chose for my soon-to-be niece&#8217;s room).</p>
<p style="text-align:justify;">Now if only I could just happen upon a large trunk full of lovely fabric and notions to feed my desire to make things all by myself!</p>

The <a href="http://dietdessertndogs.wordpress.com/2008/05/30/shock-and-ossify-raw-fig-and-cherry-bars/" target="_blank">&#8220;Fig and Cherry Bars</a> have become my favourite raw bar and I&#8217;ve made these puppies 4 times already! (This is indeed a lot because neither the Guppy or Mr. Fish will eat them. I don&#8217;t know why. They are the best raw bar I&#8217;ve ever had, let alone made!).</p>

<p style="text-align:justify;">When I first read the recipe, I wanted to make them post haste,  the only problem was I didn&#8217;t have any dried cherries. I looked around my kitchen (this took me about 5 seconds because I have a lilliputian French apartment kitchen!). Dried cherries I had not, alas, but an unassuming sealed bag of dried prunes caught my eye. <em>Pourquoi pas?</em> Dried prunes are very sweet, quite high in calcium (which was what these bars were all about!), and rather moist (a bonus in the raw bar department, really).</p>
<p style="text-align:justify;">I&#8217;m thrilled to report that the dried prunes rocked the raw bars without a doubt - they were moist and sweet enough that I could opt out on the optional agave syrup, so yeah for that. After doing a little scooby-dooing around my <em>petite ville</em> I found that if I really wanted dried cherries I also had to be ready to shell out nearly 15E for about a handful. To this I said, <em>non</em>. If you&#8217;ve got dried cherries priced for the proletariat in your hood, however, I suggest you follow Ricki&#8217;s recipe. I&#8217;m sure they&#8217;d be all tarty-delicious. I also added 2 tablespoons of carob powder to one of the batches and it was a very good move.</p>

<p>This little gadget is one of the best kitchen investments I&#8217;ve ever made. Maybe I&#8217;m the last human on this planet to have ignored the existence of these puppies, I don&#8217;t know. I <em>do</em> know that removing the zest from citrus has always driven me nuts, and to be honest I would sometimes skip it because I found it to be such a pain (I know *hanging head*). Then I found &#8220;The Zester&#8221;. I love this thing. It has made zesting about 90% less annoying. It is so handy and it was worth every cent of the 7E I spent!</p>

<p style="text-align:justify;">And because this post is all about Ricki (and that&#8217;s ok, because she&#8217;s pretty rockin&#8217;), here&#8217;s a sloppy picture of my <a href="http://dietdessertndogs.wordpress.com/?s=grapefruit" target="_blank">Radish and Grapefruit Salad.</a> Radishes are so good for you- very good for muscle tissue recuperation (I wish I could link to the two articles I&#8217;ve read about this but I cannot find them for the life of me! One was from a Sports Therapy Journal and the other was written by Amby Burfoot for Runner&#8217;s World). Despite their good-for-you-ness, I have a tough time working them into my meals, but the tartness of the grapefruit marries perfectly with the bitterness of the radishes. I added a generous teaspoon of tahini to the dressing and it was perfect!</p>

<p>This month Ben of <a href="http://whatscooking.us/" target="_blank">What&#8217;s Cooking?</a> and Kellypea of <a href="http://sassandveracity.typepad.com/" target="_blank">Sass &amp; Voracity</a> proposed a fabulous challenge to the Daring Bakers, the “Danish Braid” from <a href="http://www.amazon.com/Secrets-Baking-Techniques-Sophisticated-Desserts/dp/0618138927" target="_self">Sherry Yard’s The Secrets of Baking.</a> I was honestly thrilled as I read through our <em>défi</em> for the month of June, because it was totally and completely new and 100% never - ever been tried before by the Shellyfish. That&#8217;s why I wanted to be a Daring Baker - to be <span style="text-decoration:line-through;">pushed</span> gently nudged into the deep end of the vegan baking pool. Veganism isn&#8217;t terribly new to me, but baking sure is!</p>
<p>There was a moment of confusion, I do admit, when I came upon the description of our technique, working with a  &#8220;yeasted laminated dough&#8221;. To me, this just didn&#8217;t sound like something that would be very tasty. It sounded more like a shop-class meets home-economics in some freak accident sort of thing. Laminated dough?  Again, being a novice baker, this was unknown jargon to me. I re-read the different steps involved in the recipe, and then it hit me : this is a <em>pâte feuilletée!</em> I totally know what this is! Rock on party people, rock on!</p>
<p>Without falling into the trap of an overly-verbose blog entry, I&#8217;ll just mention a few little details :</p>
<ul>
<li> First off, I <strong>loved</strong> this challenge, but it was more time consuming than I&#8217;d thought it would be (despite my reading through the steps, I guess all the resting &amp; rising times just didn&#8217;t sink in).</li>
<li>I must have generated some good Daring Bakers karma, because this challenge was a slam dunk- I mean everything went really well the *first* time around, and tasted amazing. My only bummer was my camera batteries were almost dead so my pictures were getting a little blurry (and I had to hurry because the braids were being eaten by guests just moments after).</li>
<li>I think my favorite part was the initial mixing of the dough because the cardamom just smelled so incredible and the mixture looked so beautiful with the orange zest and the flecks of flaxseed.</li>
<li>Speaking of flaxseed, I used one &#8220;flax egg&#8221; (1 tbsp ground flax seeds &amp; 3 tbsp water) and one &#8220;soy egg&#8221; (about 1/4 cup of plain soy yogurt).</li>
<li>I made an apple filling, following the recipe below, and added 1 cup of chopped walnuts. I found it to be rather runny, but after adding more apples and some apple-cinnamon &amp; orange marmalade it thickened up nicely &amp; tasted great!</li>

<p style="text-align:left;"><strong>DANISH DOUGH</strong></p>
<p>Makes 2-1/2 pounds dough</p>
<p><span class="bbu">Ingredients</span><br />
<em>For the dough (Detrempe)</em><br />
1 ounce fresh yeast or 1 tablespoon active dry yeast<br />
1/2 cup whole milk<br />
1/3 cup sugar<br />
Zest of 1 orange, finely grated<br />
3/4 teaspoon ground cardamom<br />
1-1/2 teaspoons vanilla extract<br />
1/2 vanilla bean, split and scraped<br />
2 large eggs, chilled<br />
1/4 cup fresh orange juice<br />
3-1/4 cups all-purpose flour<br />
1 teaspoon salt</p>
<p><em>For the butter block (Beurrage)</em><br />
1/2 pound (2 sticks) cold unsalted butter<br />
1/4 cup all-purpose flour</p>
<p><strong>DOUGH</strong><br />
Combine yeast and milk in the bowl of a mixer fitted with the paddle attachment and mix on low speed.  Slowly add sugar, orange zest, cardamom, vanilla extract, vanilla seeds, eggs, and orange juice.  Mix well.  Change to the dough hook and add the salt with the flour, 1 cup at a time, increasing speed to medium as the flour is incorporated.  Knead the dough for about 5 minutes, or until smooth.  You may need to add a little more flour if it is sticky.  Transfer dough to a lightly floured baking sheet and cover with plastic wrap. Refrigerate for 30 minutes.</p>
<p><span class="bbu">Without a standing mixer</span>:  Combine yeast and milk in a bowl with a hand mixer on low speed or a whisk.  Add sugar, orange zest, cardamom, vanilla extract, vanilla seeds, eggs, and orange juice and mix well.  Sift flour and salt on your working surface and make a fountain.  Make sure that the “walls” of your fountain are thick and even.  Pour the liquid in the middle of the fountain.  With your fingertips, mix the liquid and the flour starting from the middle of the fountain, slowly working towards the edges.  When the ingredients have been incorporated start kneading the dough with the heel of your hands until it becomes smooth and easy to work with, around 5 to 7 minutes.  You might need to add more flour if the dough is sticky.</p>
<p><strong>BUTTER BLOCK</strong><br />
1.    Combine butter and flour in the bowl of a mixer fitted with a paddle attachment and beat on medium speed for 1 minute.  Scrape down the sides of the bowl and the paddle and then beat for 1 minute more, or until smooth and lump free.  Set aside at room temperature.<br />
2.    After the detrempe has chilled 30 minutes, turn it out onto a lightly floured surface.  Roll the dough into a rectangle approximately 18 x 13 inches and ¼ inch thick.  The dough may be sticky, so keep dusting it lightly with flour.  Spread the butter evenly over the center and right thirds of the dough.  Fold the left edge of the detrempe to the right, covering half of the butter.  Fold the right third of the rectangle over the center third.  The first turn has now been completed.  Mark the dough by poking it with your finger to keep track of your turns, or use a sticky and keep a tally.  Place the dough on a baking sheet, wrap it in plastic wrap, and refrigerate for 30 minutes.<br />
3.    Place the dough lengthwise on a floured work surface.  The open ends should be to your right and left.  Roll the dough into another approximately 13 x 18 inch, ¼-inch-thick rectangle.  Again, fold the left third of the rectangle over the center third and the right third over the center third.  No additional butter will be added as it is already in the dough. The second turn has now been completed.  Refrigerate the dough for 30 minutes.<br />
4.    Roll out, turn, and refrigerate the dough two more times, for a total of four single turns.  Make sure you are keeping track of your turns.  Refrigerate the dough after the final turn for at least 5 hours or overnight.  The Danish dough is now ready to be used.  If you will not be using the dough within 24 hours, freeze it.  To do this, roll the dough out to about 1 inch in thickness, wrap tightly in plastic wrap, and freeze.  Defrost the dough slowly in the refrigerator for easiest handling.  Danish dough will keep in the freezer for up to 1 month.</p>
<p><strong>APPLE FILLING</strong><br />
Makes enough for two braids</p>
<p><span class="bbu">Ingredients</span><br />
4 Fuji or other apples, peeled, cored, and cut into ¼-inch pieces<br />
1/2 cup sugar<br />
1 tsp. ground cinnamon<br />
1/2 vanilla bean, split and scraped<br />
1/4 cup fresh lemon juice<br />
4 tablespoons unsalted butter</p>
<p>Toss all ingredients except butter in a large bowl.  Melt the butter in a sauté pan over medium heat until slightly nutty in color, about 6 - 8 minutes.  Then add the apple mixture and sauté until apples are softened and caramelized, 10 to 15 minutes.  If you’ve chosen Fujis, the apples will be caramelized, but have still retained their shape. Pour the cooked apples onto a baking sheet to cool completely before forming the braid.  (If making ahead, cool to room temperature, seal, and refrigerate.) They will cool faster when spread in a thin layer over the surface of the sheet.  After they have cooled, the filling can be stored in the refrigerator for up to 3 days.  Left over filling can be used as an ice cream topping, for muffins, cheesecake, or other pastries.</p>
<p><strong>DANISH BRAID</strong><br />
Makes enough for 2 large braids</p>
<p><span class="bbu">Ingredients</span><br />
1 recipe Danish Dough (see below)<br />
2 cups apple filling, jam, or preserves (see below)</p>
<p>For the egg wash:  1 large egg, plus 1 large egg yolk</p>
<p>1.    Line a baking sheet with a silicone mat or parchment paper.  On a lightly floured  surface, roll the Danish Dough into a 15 x 20-inch rectangle, ¼ inch thick.  If the dough seems elastic and shrinks back when rolled, let it rest for a few minutes, then roll again.  Place the dough on the baking sheet.<br />
2.    Along one long side of the pastry make parallel, 5-inch-long cuts with a knife or rolling pastry wheel, each about 1 inch apart.  Repeat on the opposite side, making sure to line up the cuts with those you’ve already made.<br />
3.    Spoon the filling you’ve chosen to fill your braid down the center of the rectangle.  Starting with the top and bottom “flaps”, fold the top flap down over the filling to cover.  Next, fold the bottom “flap” up to cover filling.  This helps keep the braid neat and helps to hold in the filling. Now begin folding the cut side strips of dough over the filling, alternating first left, then right, left, right, until finished.  Trim any excess dough and tuck in the ends.</p>
<p><span class="bbu">Egg Wash</span><br />
Whisk together the whole egg and yolk in a bowl and with a pastry brush, lightly coat the braid.</p>
<p><span class="bbu">Proofing and Baking</span><br />
1.    Spray cooking oil (Pam…) onto a piece of plastic wrap, and place over the braid.  Proof at room temperature or, if possible, in a controlled 90 degree F environment for about 2 hours, or until doubled in volume and light to the touch.<br />
2.    Near the end of proofing, preheat oven to 400 degrees F.  Position a rack in the center of the oven.<br />
3.    Bake for 10 minutes, then rotate the pan so that the side of the braid previously in the back of the oven is now in the front. Lower the oven temperature to 350 degrees F, and bake about 15-20 minutes more, or until golden brown.  Cool and serve the braid either still warm from the oven or at room temperature.  The cooled braid can be wrapped airtight and stored in the refrigerator for up to 2 days, or freeze for 1 month.</p>
