You 60-Day Project People are all just amazing! I can hardly keep up with all your generosity! Huge thank yous go out to: Maria Rose of Little Things Are Big, Sophie of Her Heart, My Hands, Amanda of Walking The Vegan Line, Carmen of About a Girl, Jessy of Happyveganface, Meg of Becoming Whole and Amanda of Gemusings! It would be impossible to show you all how grateful I am for you and your helping my mother’s 60th birthday the best yet! I’d also like to wish Maria Rose a very happy (late) birthday (again)!
If I could, I would make you all delicious and healthy veggie burgers like these :

I regularly sing the praises of Jessy’s culinary creations, but have I told you how amazing all her burger recipes are? A few of us are trying to convince her she needs to write a Veggie Burger cookbook, because she is just so talented!
Jessy’s Butter Bean Burgers recipe is easy and delicious and everyone agreed they were fabulous! We ate them with regular buns and “the works”, and the next day the left-over patties were a fun lunch just served on a bed of fresh baby cabbage leaves. If you’re ever in a slump and you’re not sure what to make for dinner, head over to Jessy’s most excellent recipe index – you’ll find the inspiration you need to get your dinner on!
Now I really need to get cracking on Guppy’s brithday gifts…I have less than two weeks to get things done! She’s going to be 4! Aaarrrk!
Yay for Jessy! Her recipe index always saves the day.
ok, this is the second veggie burger post i’ve seen today and i want one so bad!! *pout*
i need some beansies.
I agree that jessy needs to write a cookbook! All of her recipes are delicious!
I flippin love those butterbean burgers, they are awesome!
I have that recipe saved in my to-make list! I just have to get the ingredients. I looooove butter beans =)
I think Jessy’s burgers are the best!
4 in 2 weeks! Yikes such a big girl already!
Hi! Haven’t stopped in for a while (sorry) so I have some catching up to do. I’d love to try some vegi/bean burgers. Cut back on the meat for a bit. These look and sound so yummy!
So excited when I saw this post after peering in my cupboard for the 5th time thinking there has got to be something in here we can eat for dinner – we actually have butter beans! I hope Siena likes this I am not sure how honest she is when she tells me she likes the premade tofu sausages.
I am so happy that your mum got all her gifts, so much fun. You are such a lovely daughter!
Yup, I left Jessy a comment recently begging her to write a burger book. She already has a ton of recipes!! I mean, the girl even makes her own buns!
Jessy is the mastress of burgers, no doubt! Yummyness all around!!! And, I am excited to send off your mom’s pressie this week!!!!! And, happiest early b-day wishes to Guppy. You must be so proud!
i’m so glad Mammafish is loving the 60-Day project, Shelly! thanks again for letting dan & i help your mum celebrate her 60th birthday! we had such a blast picking out yummies and sending them her way!
you are just too sweet with all the rock’n words about our recipes, Shelly! we’re so superhappyfaced that you all enjoyed our butter beans burgers! hooray for enjoying them with “the works” and we’re gonna have to try them sans buns and over a salad sometime. i’ve never tried baby cabbage leaves – i think i’m gonna have to keep an eye out for some & pick some up to enjoy! mmmmmmmmm!
hope you had a glorious weekend, and i hope you’re feeling mucho better, too!
I cannot wait to see the Guppy-prezzie.
Thanks for the update! Your mom is one lucky gal.
I agree–Jessy needs to write a burger book! And maybe a curry book. And maybe a wrap book. . . .but definitely a burger book!
Looove those burgers.
Wishing Guppy an early happy birthday!!
